WHAT IS ORGANIC COCONUT SUGAR

Coconut sap sugar is derived NOT from the NUT but from the toddy / sweet sap (tuba). The unopened flower is thinly sliced (6mm). Sap oozing out from the bud is collected. The sap is boiled, and concentrated, to form granulated sugar Coconut Sap contains;

Glycemic Index (GI) of Coconut Sugar

Based on Food and Nutrition Research Institute (FNRI) study on 2007, the GI of coconut sap sugar was 35, hence classified as Low GI food.

The GI is a ranking system for carbohydrates based on the immediate effect on blood glucose levels. The higher the number, the greater the blood sugar response. The Food and Agriculture Organization (FAO) of the World Bank has reported that coconut palm sweeteners are the single most sustainable sweetener in the world!

Because Coconut palms are an ecologically beneficial tree crop that grows in diverse, wildlife supportive ecosystems that restore damaged soils and require very little water.

Coconut palms produce an average of 50-75% more sugar per acre than sugar cane and use less than 1/5th the soil nutrients and water for that production.

Coconut palms can grow in severely compromised soil (just think of sandy beaches), can survive drought conditions and still produce the sweet nectar.

Many traditional communities throughout the world consider coconut palms the “Tree of Life”, as they provide a variety of accessible products from which they earn their livelihoods.
